  • ½ cup (50g) unsweetened cocoa powder (Dutch-processed preferred)
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs, at room temperature
  • ½ cup (120ml) vegetable oil
  • ¼ cup (60ml) buttermilk
  • 1 teaspoon vanilla extract
  • 1 ½ cups shredded zucchini (about 1 medium zucchini), loosely packed, not squeezed
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or spray with non-stick spray.
  2. Wash zucchini, trim ends, and shred using a box grater until you have 1 ½ cups loosely packed. Do not squeeze out moisture.
  3. In a large bowl, whisk together flour, cocoa powder, granulated sugar, brown sugar, baking soda, and salt until no lumps remain.
  4. In a separate medium bowl, whisk eggs until light and frothy. Add vegetable oil, buttermilk, and vanilla extract; whisk until smooth.
  5. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not over-mix.
  6. Fold in shredded zucchini and ¾ cup of chocolate chips (reserve ¼ cup for topping). Batter will be thick and glossy.
  7. Divide batter evenly among 12 muffin cups, filling each about ¾ full. Sprinkle reserved chocolate chips on top.
  8. Bake for 18-22 minutes, until a toothpick inserted in center comes out with a few moist crumbs (not wet batter).
  9. Let muffins cool in tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not squeeze moisture out of the zucchini—it’s the secret to fudgy texture. Use room temperature eggs and buttermilk for best results. Check muffins at 18 minutes to avoid over-baking. For a gluten-free version, use a 1:1 gluten-free baking blend. For dairy-free, use dairy-free buttermilk and chocolate chips.
