  • 1 can (15 oz) refried beans (or black beans, drained and rinsed)
  • 2 cups shredded Mexican blend cheese (cheddar, Monterey Jack, asadero)
  • 1/2 cup pickled jalapeños (drained)
  • 1 lb ground beef (80/20, or ground turkey or chorizo)
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 large tomato (diced)
  • 1/2 cup sour cream
  • 1/2 cup fresh salsa (or pico de gallo)
  • 1/2 cup guacamole (store-bought or homemade)
  • 1/4 cup sliced black olives (optional)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook 1 lb ground beef for 5-7 minutes, breaking it up, until browned. Drain excess fat. Add 1 packet taco seasoning and 1/2 cup water. Stir and simmer for 2-3 minutes until thickened. Set aside.
  3. Spread tortilla chips in an even layer on a rimmed baking sheet.
  4. Spoon small dollops of refried beans over the chips.
  5. Sprinkle shredded Mexican blend cheese evenly over the chips and beans. Scatter pickled jalapeños on top.
  6. Bake for 8-10 minutes, until cheese is melted and bubbly.
  7. While nachos bake, arrange a serving platter or cutting board. Place small bowls for sour cream, salsa, and guacamole on the board.
  8. Carefully transfer the baked nachos to the serving board.
  9. Sprinkle cooked taco meat over the hot nachos. Add shredded lettuce, diced tomato, and sliced black olives. Dollop sour cream, salsa, and guacamole around the board. Garnish with fresh cilantro.
  10. Serve immediately.

Notes

For best results, keep wet toppings (salsa, sour cream, guacamole) in separate bowls to prevent chips from getting soggy. Prep all ingredients before baking to assemble quickly. Leftover components can be stored separately for up to 3 days.
