  • 1 cup (240ml) heavy cream
  • 1/2 cup (100g) granulated sugar, divided

  • About 30 ladyfinger cookies (savoiardi)
  • Unsweetened cocoa powder, for dusting
  • Optional garnishes: chocolate shavings or curls, fresh berries (raspberries or strawberries), toasted almonds or hazelnuts

Instructions

  1. Prepare the espresso (5 minutes): Brew 1/2 cup of strong espresso and set aside to cool to room temperature.
  2. Whip the cream (5 minutes): In a chilled mixing bowl, whip the heavy cream with 1/4 cup of the sugar until soft peaks form.
  3. Make the mascarpone mixture (5 minutes): In a separate bowl, combine mascarpone cheese, remaining 1/4 cup sugar, vanilla extract, and cooled espresso. Gently fold in the whipped cream until smooth and airy.
  4. Assemble the first layer (10 minutes): Quickly dip each ladyfinger into the espresso (1-2 seconds per side) and line the bottom of your cake ring or serving dish. Spread about 1/3 of the mascarpone mixture evenly over the ladyfingers.
  5. Repeat layers (10 minutes): Add another layer of dipped ladyfingers, then mascarpone mixture. Repeat one more time, finishing with mascarpone on top.
  6. Chill (at least 4 hours, preferably overnight): Cover with plastic wrap and refrigerate to allow flavors to meld and ladyfingers to soften.
  7. Dust and garnish (5 minutes): Before serving, dust the top generously with cocoa powder using a sieve. Add optional chocolate shavings, fresh berries, or nuts if desired.
