These healthy banana oat muffins are naturally sweetened with ripe bananas and contain no added sugar. They are quick, easy, and perfect for a wholesome breakfast or snack.

  • 3 medium ripe bananas, mashed
  • 1 ½ cups old-fashioned rolled oats (135g)
  • ½ cup whole wheat flour (60g)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 large eggs, room temperature
  • ½ cup plain Greek yogurt (120g) (use dairy-free yogurt to keep it vegan)
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts or dark chocolate chips (optional, 75g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin or line with paper liners.
  2. If desired, pulse the oats in a food processor or blender for about 10 seconds until they resemble coarse flour for a finer texture.
  3. In a large bowl, combine oat flour (or whole oats), whole wheat flour, baking powder, baking soda, cinnamon, and salt. Whisk together.
  4. In another bowl, mash the ripe bananas until smooth but with a few lumps.
  5. Add eggs, Greek yogurt, and vanilla extract to the mashed bananas. Whisk until combined.
  6. Pour the banana mixture into the dry ingredients bowl. Stir gently with a spatula until just combined, avoiding overmixing.
  7. Fold in nuts or chocolate chips if using.
  8. Spoon the batter evenly into the prepared muffin tin, filling each about ¾ full.
  9. Bake for 18–22 minutes. Test doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  10. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Grease muffin tin properly or use paper liners to prevent sticking. Avoid overmixing batter to keep muffins tender. If bananas are not very ripe, add 1 teaspoon honey or maple syrup for extra sweetness (optional). Tent muffins with foil if browning too fast. For gluten-free, substitute whole wheat flour with almond or oat flour and use certified gluten-free oats. For vegan, replace eggs with flax eggs and use dairy-free yogurt.
