  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 4 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 (28-ounce) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup low-sodium chicken broth
  • ¼ cup strong coffee or dark beer (optional)
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • Optional toppings: shredded sharp cheddar cheese, sour cream or Greek yogurt, fresh cilantro, diced avocado, pickled jalapeños

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (about 5 minutes).
  2. Add diced onion, red bell pepper, and jalapeño. Cook for 4-5 minutes until vegetables soften. Add minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle chili powder, cumin, smoked paprika, oregano, salt, and pepper over the mixture. Stir constantly for 1 minute to toast the spices.
  4. Pour in crushed tomatoes, tomato paste, chicken broth, and coffee or dark beer. Stir, scraping up any browned bits from the bottom. Add drained kidney and pinto beans.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for at least 20 minutes, stirring occasionally. If too thick, add a splash of broth or water.
  6. Taste and adjust seasoning with more salt, cayenne, or hot sauce as desired. Add a squeeze of lime juice for brightness if you like.
  7. Ladle into bowls and top with desired garnishes. Serve with cornbread or tortilla chips.

Notes

For best flavor, make a day ahead and reheat. To thicken, simmer uncovered for extra 10-15 minutes. For a vegetarian version, swap turkey for two cans of black beans or soy crumbles and use vegetable broth. To make it spicier, add a diced chipotle pepper in adobo sauce or a teaspoon of cayenne. For a sweet potato chili, add one diced medium sweet potato with the tomatoes. This chili freezes well for up to 3 months.
