  • 1 lb (450g) boneless, skinless chicken breasts or thighs
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tbsp dried oregano (or 1.5 tbsp fresh, chopped finely)
  • Salt and freshly ground black pepper, to taste
  • 1 cup (240g) plain Greek yogurt
  • 1/2 large cucumber, grated and well-drained
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill (optional)
  • Salt, to taste
  • 1 cup (190g) pearl farro
  • 2 1/2 cups (600ml) water or low-sodium vegetable broth
  • Pinch of salt
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley or mint leaves for garnish

Instructions

  1. Rinse 1 cup pearl farro under cold water. In a medium saucepan, bring 2 1/2 cups water or vegetable broth and a pinch of salt to a boil. Add farro, reduce heat to a simmer, cover, and cook for 20-25 minutes until tender but chewy. Drain excess liquid if needed, then fluff with a fork and set aside to cool slightly.
  2. In a bowl, combine 1 lb chicken with 2 minced garlic cloves, 2 tbsp olive oil, juice of 1 lemon, 1 tbsp dried oregano, salt, and pepper. Toss well to coat. Cover and refrigerate for at least 15 minutes.
  3. Grate 1/2 large cucumber and place in a fine mesh strainer or clean towel. Press firmly to remove excess moisture. In a bowl, mix 1 cup Greek yogurt, grated cucumber, 1 minced garlic clove, 1 tbsp lemon juice, 1 tbsp chopped fresh dill (optional), and salt to taste. Chill until ready to serve.
  4. Heat a skillet or grill pan over medium-high heat. Add marinated chicken pieces in a single layer. Cook 5-6 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C). Remove and let rest for 5 minutes before slicing.
  5. Assemble the bowl by placing a generous scoop of farro in each bowl. Top with sliced chicken, a dollop of tzatziki, halved cherry tomatoes, Kalamata olives, and a sprinkle of crumbled feta if using. Garnish with fresh parsley or mint leaves.

Notes

Drain the grated cucumber well to avoid watery tzatziki. Marinate chicken for at least 15 minutes for best flavor. Let chicken rest after cooking to keep it juicy. Farro should be cooked tender but still chewy. Toast farro before boiling for extra nutty flavor if desired. Leftovers keep well for up to 3 days refrigerated.
