  • 1 cup (30 g) cherry tomatoes, halved
  • 1/2 cup (50 g) cucumber slices
  • 1/2 cup (30 g) snap peas or green beans, trimmed
  • 2 tablespoons fresh parsley or cilantro, chopped (optional, for garnish)
  • Whole grain crackers or pita bread slices (check nut-free brands if needed)

Instructions

  1. Prepare the Hummus Dip: In a food processor, combine canned chickpeas, tahini, minced garlic, lemon juice, olive oil, and cumin. Pulse until smooth. Add water 1 tablespoon at a time if too thick until creamy and spreadable. Season with salt to taste. Takes about 10 minutes. Scrape sides halfway through blending.
  2. Slice the Veggies: Wash and cut bell peppers into thin strips, peel and slice carrot sticks, halve cherry tomatoes, slice cucumber, and trim snap peas or green beans. Arrange on a plate or in bento box compartments. Prep time: 8-10 minutes. Optional: Toss snap peas and green beans in olive oil and roast 5 minutes at 400°F (205°C) for sweeter flavor.
  3. Prepare the Turkey: Lay turkey slices on a clean surface. Drizzle lightly with olive oil if desired and roll or fold for easy grabbing. Takes about 2 minutes.
