  • 3 medium sweet potatoes, peeled and diced into 1/2-inch cubes (about 4 cups)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups low-sodium chicken broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Greek yogurt or sour cream (for serving)
  • Shredded cheddar cheese (for serving)
  • Fresh cilantro, chopped (for serving)
  • Diced avocado (for serving)
  • Lime wedges (for serving)
  • Crushed tortilla chips (for serving)

Instructions

  1. Prep your vegetables: Peel and dice the sweet potatoes into 1/2-inch cubes. Dice the onion and bell pepper, and mince the garlic.
  2. Mix the spices: In a small bowl, combine chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and black pepper.
  3. Layer the ingredients in the slow cooker: Start with the diced onion and bell pepper on the bottom. Add the ground turkey on top, breaking it into large chunks. Sprinkle about half the spice mixture over the turkey. Add the diced sweet potatoes, then pour the crushed tomatoes and diced tomatoes (with juices) over everything. Add the chicken broth and the remaining spice mixture. Stir gently.
  4. Cook low and slow: Cover and cook on low for 6 hours or on high for 3 hours. About 30 minutes before serving, stir in the drained and rinsed black beans and kidney beans. Let them heat through.
  5. Taste and adjust: After cooking, taste the chili and adjust seasoning with more salt, heat, or a squeeze of lime juice if desired.
  6. Serve: Ladle into bowls and top with Greek yogurt, shredded cheese, cilantro, avocado, lime wedges, or crushed tortilla chips as desired.

Notes

For best texture, cut sweet potatoes into uniform 1/2-inch cubes. The chili thickens as it sits; add a splash of broth when reheating if needed. This recipe is forgiving and can be adapted with different proteins or beans.
