  • 1 large yellow onion, diced (about 1.5 cups)
  • 4 cloves garlic, minced
  • 1 pound lean ground turkey (93/7)
  • 1 (15-ounce) can fire-roasted diced tomatoes
  • 1 (15-ounce) can crushed tomatoes
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 1 medium green bell pepper, diced (about 1 cup)
  • 1 medium jalapeño, seeded and minced (optional)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Shredded cheddar cheese (for garnish, optional)
  • Sour cream or Greek yogurt (for garnish, optional)
  • Fresh cilantro, chopped (for garnish, optional)
  • Sliced green onions (for garnish, optional)
  • Diced avocado (for garnish, optional)

Instructions

  1. Prep your vegetables (5 minutes). Dice the onion, bell pepper, and jalapeño (if using). Mince the garlic. Open all cans and have them ready.
  2. Heat the olive oil (1 minute). Place Dutch oven over medium heat. Add olive oil and let it shimmer. Add diced onion and cook until translucent, about 4 minutes.
  3. Add the garlic and peppers (2 minutes). Add minced garlic, diced bell pepper, and jalapeño. Stir and cook for 2 minutes until fragrant.
  4. Add the ground turkey (no browning needed). Add turkey directly to pot. Break it up with a wooden spoon and cook until no longer pink, about 3-4 minutes.
  5. Add the seasoning blend (1 minute). Sprinkle chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper over turkey. Stir and cook for 1 minute to toast spices.
  6. Add the tomatoes, beans, and broth (2 minutes). Pour in fire-roasted diced tomatoes, crushed tomatoes, drained kidney beans, drained black beans, and chicken broth. Stir to combine, scraping bottom of pot.
  7. Bring to a simmer (5 minutes). Increase heat to medium-high and bring to a gentle boil. Reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally.
  8. Adjust seasoning and consistency (5 minutes). Uncover, stir, and taste. Adjust salt, cumin, or add lime juice if needed. If too thick, add ¼ cup broth; if too thin, simmer uncovered for 5 more minutes.
  9. Rest and serve (5 minutes). Remove from heat and let rest for 5 minutes. Ladle into bowls and add desired garnishes.

Notes

Don’t brown the turkey—it keeps it tender. Toast spices for 1 minute to bloom flavor. Use fire-roasted tomatoes for smokiness. Let chili rest before serving. Chili improves overnight.
