Hotel Breakfast Easter Board with Smoked Salmon and Bagel Crisps

  • 8 oz (225g) smoked salmon, thinly sliced
  • 2 large bagels (plain or everything), sliced into 1/4-inch thick rounds
  • 8 oz (225g) full-fat cream cheese
  • 2 tablespoons capers
  • 1/2 small red onion, thinly sliced and soaked in cold water for 10 minutes
  • 1/2 medium cucumber, peeled into thin ribbons
  • A few sprigs fresh dill
  • 1 lemon, sliced into wedges
  • 1 cup cherry tomatoes, halved (optional)
  • Olive oil, for drizzling
  • Everything bagel seasoning (optional)
  • Microgreens or arugula (optional)
  • Creamy horseradish sauce (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Slice bagels into 1/4-inch thick rounds. Arrange in a single layer on the baking sheet. Brush lightly with olive oil and sprinkle with everything bagel seasoning if desired.
  3. Bake bagel crisps for 15-20 minutes, flipping halfway through (about 10 minutes in), until golden and crisp. Transfer to a wire rack to cool completely.
  4. While crisps bake, thinly slice red onion and soak in cold water for 10 minutes to mellow the bite.
  5. Prepare toppings: slice lemon into wedges, peel cucumber into ribbons, halve cherry tomatoes, and pick fresh dill sprigs. Arrange these on the serving board along with capers and cream cheese in small bowls.
  6. Arrange bagel crisps, smoked salmon slices, and all toppings artfully on the board. Drizzle olive oil over cucumbers and tomatoes for shine.
  7. Serve immediately, encouraging guests to build their own bites with cream cheese, salmon, capers, onion, cucumber, dill, and a squeeze of lemon.

Notes

Slice bagels about 1/4 inch thick for perfect crisps. Soak red onion in cold water for 10 minutes to mellow sharpness. Flip bagel crisps halfway through baking for even browning. Use room temperature cream cheese for easier spreading. Assemble just before serving to keep textures fresh. Reheat bagel crisps at 300°F for 5 minutes to refresh crunch if stored.
