These baked pork chops are perfectly juicy with a gorgeous garlic herb butter melting over the top. A quick sear on the stovetop before baking locks in the juices and creates a beautiful golden crust.

  • 4 bone-in pork chops, about 1 inch thick
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder

Instructions

  1. Make the garlic herb butter: In a small bowl, combine softened butter, minced garlic, chopped parsley, rosemary, and thyme. Mix with a fork until evenly distributed. Add a pinch of salt and pepper. Set aside at room temperature.
  2. Prepare the pork chops: Remove chops from fridge 20 minutes before cooking. Pat dry with paper towels. Season both sides generously with salt, pepper, paprika, and garlic powder.
  3. Preheat oven to 400°F (200°C) with rack in middle position.
  4. Sear the pork chops: Place a cast iron skillet over medium-high heat and add olive oil. When oil is shimmering, carefully add chops. Cook 3-4 minutes on first side without moving, then flip and cook 2-3 minutes on second side.
  5. Add garlic herb butter: Turn off heat. Spoon about half of the garlic herb butter over the tops of the chops. Let it melt and pool around them. Use a basting brush or tilt the pan to spread evenly.
  6. Bake: Transfer skillet to preheated oven. Bake 10-12 minutes for 1-inch thick chops, until internal temperature reaches 145°F (63°C) at the thickest part.
  7. Rest: Remove skillet from oven and transfer chops to a cutting board. Spoon any remaining butter from the pan over the top. Let rest 5-7 minutes.
  8. Serve: Serve chops with remaining garlic herb butter spooned over the top.

Notes

Don’t skip the sear—it locks in juices and creates a golden crust. Use a meat thermometer for best results; pull chops at 140-142°F as they will continue cooking while resting. Let butter soften properly for even mixing. Use thick chops (at least 1 inch) for best results. Do not overcrowd the pan when searing.
