Instructions

  1. Brown the Butter: In a small saucepan over medium heat, melt 1/2 cup (115g) unsalted butter. Stir frequently as the butter foams, then turns golden brown with nutty aroma (about 5-7 minutes). Remove from heat and let cool slightly.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray and line with parchment paper for easy removal.
  3. Make the Streusel Topping: In a small bowl, combine 1/4 cup (50g) brown sugar, 1/4 cup (30g) all-purpose flour, and 1/2 cup (60g) chopped walnuts. Add 3 tablespoons (45g) cold cubed butter and use your fingers or a fork to mix until crumbly. Set aside.
  4. Mix Wet Ingredients: In a large bowl, mash 3 ripe bananas until mostly smooth but with some texture. Add the browned butter, 3/4 cup (150g) granulated sugar, 1/4 cup (50g) brown sugar, 2 large eggs, and 1 teaspoon vanilla extract. Whisk until combined.
  5. Combine Dry Ingredients: In a separate bowl, sift together 1 3/4 cups (220g) all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon cinnamon (if using).
  6. Mix Batter: Gradually fold the dry ingredients into the wet mixture using a spatula. Don’t overmix—stop when just combined; a few flour streaks are fine. Fold in 1/2 cup (60g) chopped toasted walnuts.
  7. Transfer & Add Streusel: Pour batter into the prepared pan and smooth the top. Sprinkle the walnut streusel evenly over the batter.
  8. Bake: Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs. If streusel browns too quickly, tent with foil halfway through baking.
  9. Cool: Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack. This resting time helps the bread set and keeps it moist inside.
