A moist and flavorful blueberry zucchini bread with a hint of lemon zest, made easy with a one-bowl method. Perfect for breakfast or a snack, this bread is tender, bursting with juicy blueberries, and brightened by fresh lemon zest.

  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup (150g) granulated sugar
  • ⅓ cup (80ml) vegetable oil (canola or light olive oil preferred)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 1 medium zucchini), packed but not squeezed dry
  • 1 cup (150g) fresh blueberries, washed and patted dry (frozen works too, toss with a little flour first)
  • Zest of 1 medium lemon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan lightly with oil or line it with parchment paper.
  2. Grate the zucchini using the fine side of a box grater to get about 1 ½ cups packed. Set aside without squeezing out moisture.
  3. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon until evenly combined.
  4. Add the granulated sugar to the dry mixture and whisk again.
  5. Make a well in the center of the dry ingredients and add the vegetable oil, eggs, and vanilla extract. Gently mix with a rubber spatula or wooden spoon until just combined; do not overmix.
  6. Carefully fold in the grated zucchini, fresh blueberries, and lemon zest, stirring slowly to avoid bursting the blueberries.
  7. Pour the batter into the prepared loaf pan and smooth the top. Fill the pan about ¾ full.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Start checking at 50 minutes.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Toss blueberries with a little flour before folding into batter to prevent sinking. Do not overmix batter to keep bread tender. Freshly grate zucchini for best moisture and texture. Use an oven thermometer to avoid overbaking. Rotate pan halfway through baking for even color. Lemon zest should be freshly grated right before mixing in for best flavor.
