  • 1/2 cup (115 grams) unsalted butter, softened
  • 4 to 5 fresh garlic cloves, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1/4 cup (60 ml) beef broth (optional)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a mixing bowl, combine the softened unsalted butter, minced garlic, chopped rosemary, chopped thyme, salt, and freshly ground black pepper. Mix until well blended.
  3. Pat the rib eye roast dry with paper towels.
  4. Lightly brush the roast with olive oil on all sides, then liberally spread the garlic butter mixture over the entire surface.
  5. Place the roast on a rack in your roasting pan. If using beef broth, pour it into the bottom of the pan now.
  6. Roast at 450°F (232°C) for 15 minutes.
  7. Reduce the oven temperature to 325°F (163°C). Continue roasting for about 60 to 75 minutes, or until a meat thermometer reads 130°F (54°C) for medium-rare.
  8. Remove the roast from the oven and tent loosely with aluminum foil. Let it rest for 15 to 20 minutes.
  9. Slice against the grain to serve.
