  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 ¾ cups (350g) granulated sugar
  • ¾ cup (170g) unsalted butter, softened
  • 4 large eggs, room temperature
  • 1 cup (240ml) whole milk, room temperature (can substitute with almond milk)
  • 2 teaspoons pure vanilla extract
  • 3 medium ripe mangoes (about 2 cups mango puree)
  • 1 cup (240ml) heavy cream, cold
  • ⅓ cup (40g) powdered sugar
  • 1 teaspoon gelatin powder (optional but recommended)
  • 1 tablespoon fresh lemon juice
  • 1 cup (225g) unsalted butter, softened (for buttercream)
  • 3 ½ cups (440g) powdered sugar, sifted (for buttercream)
  • 23 tablespoons heavy cream or whole milk (for buttercream)
  • 1 teaspoon pure vanilla extract (for buttercream)
  • 1 teaspoon edible gold dust or gold luster dust

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 4-5 minutes.
  3. Beat in eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Alternately add dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix just until combined.
  5. Divide batter evenly between pans. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool in pans 10 minutes, then turn out onto cooling racks.
  6. While cakes bake, puree mango flesh until smooth. Sprinkle gelatin over 2 tablespoons cold water; let bloom 5 minutes. Warm gently until dissolved.
  7. Whip cold heavy cream with powdered sugar to soft peaks. Fold mango puree, gelatin, and lemon juice gently into whipped cream. Chill until ready to use.
  8. Beat softened butter for buttercream until creamy. Gradually add powdered sugar, alternating with cream and vanilla extract. Beat on high until fluffy, about 5 minutes. Stir in edible gold dust evenly.
  9. Place one cake layer on serving plate. Spread mango cream filling generously. Top with second cake layer. Apply crumb coat of buttercream and chill 15 minutes.
  10. Pipe gold buttercream stars over the top using a star tip. Chill assembled cake at least 1 hour before serving.

Notes

If fresh mangoes are out of season, use frozen mango chunks thawed and drained. For dairy-free, substitute coconut cream and vegan butter. Bloom gelatin for stability in mango cream. Keep buttercream at room temperature before piping for best star shapes.
