  • 4 oz soft brie, room temperature
  • 4 oz goat cheese log, crumbled or sliced
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami, sliced into rounds
  • 4 oz soppressata, sliced
  • 1/2 cup mixed olives (kalamata and green)
  • 1/4 cup dried apricots or figs
  • 1/4 cup Marcona almonds or roasted salted almonds
  • 2 tablespoons honey or fig jam
  • 1 small bunch red grapes, washed and separated
  • 1 small baguette, sliced into 1/2-inch rounds
  • 1/2 cup crackers (water crackers or rosemary flatbreads)
  • Fresh rosemary sprigs for garnish (optional)
  • Cornichons or pickled onions (optional)
  • Dark chocolate squares (optional)

Instructions

  1. Prep the cheese (5 minutes): Take your cheese out of the fridge 15-20 minutes before assembling to let it come to room temperature. Slice the cheddar into thin triangles or cubes. Cut the brie into wedges if it’s a wheel. Crumble the goat cheese into small pieces. Arrange them on the board, spaced apart — you want each cheese to have its own little zone.
  2. Prep the meat (3 minutes): Lay the prosciutto slices flat, then fold each one into a loose ribbon or roll. Place them in small piles around the board. For salami or soppressata, fan out the rounds in a small cluster. Don’t stack them flat — it looks messy and they stick together.
  3. Add the accompaniments (5 minutes): Spoon the olives into a small bowl and place it on the board. Add the dried fruit directly on the board in little piles — I like to scatter them between the cheese and meat. Pour the honey or jam into another small bowl. Place the almonds in a third bowl or just pile them on an empty spot.
  4. Add fresh elements (3 minutes): Scatter the grapes around the board, filling in any gaps. They add color and freshness. If using rosemary sprigs, tuck them under the cheese for a pop of green.
  5. Arrange the base (4 minutes): Fan the baguette slices along one edge of the board. Stack the crackers in a small cluster on the opposite side. This keeps them from getting soggy from the cheese or fruit.
  6. Final touches (1 minute): Drizzle a little honey over the brie or goat cheese. Add a few cornichons or pickled onions if using. Stand back and admire your work — then dig in immediately.

Notes

Let cheese come to room temperature for best flavor. Keep wet ingredients away from crackers to prevent sogginess. Assemble no more than 30 minutes before serving. For a vegetarian version, skip the meat and double up on cheese.
