Ingredients

Scale
  • 46 thin slices prosciutto
  • 46 slices salami (Genoa or soppressata)
  • 23 slices capicola or speck (optional)
  • 23 ounces Brie or Camembert
  • 23 ounces aged cheddar
  • 2 ounces goat cheese log
  • 810 crackers (mix of plain and flavored, like water crackers and rosemary crackers)
  • 1/2 cup red grapes
  • 1 small apple or pear, sliced
  • 1/4 cup dried apricots or figs
  • 1/4 cup almonds or walnuts
  • 23 tablespoons fig jam or honey
  • 1/4 cup mixed olives (kalamata or castelvetrano, pitted)
  • Small handful cornichons

Instructions

  1. Prep Your Ingredients (5 minutes): Take the cheeses out of the fridge to let them soften. Slice the apple or pear into thin wedges and toss with a little lemon juice to prevent browning. Place the fig jam in a small bowl. Arrange the crackers in a neat stack or fan shape.
  2. Place the Bowls (1 minute): Start by setting your small bowls on the board. Put the jam in one corner, the olives in another, and the cornichons in a third. This creates anchors for the rest of the board.
  3. Add the Cheeses (2 minutes): Place the brie whole or cut into wedges. Slice the cheddar into thin triangles or cubes. Place the goat cheese log on the board and cut it into rounds. Space them out so they aren’t all in one spot. Put the soft cheese next to the jam.
  4. Add the Meats (2 minutes): Fold the prosciutto slices into loose ribbons or waves. Roll the salami slices into little cylinders. Place them near the cheeses.
  5. Fill in with Fruit and Nuts (3 minutes): Scatter the grapes in small clusters around the board. Tuck the apple slices between the cheese and meat. Add the dried apricots and nuts in little piles. Leave a little space between items.
  6. Add the Crackers (2 minutes): Arrange the crackers in a single layer or fan shape in the remaining empty spaces. You can also place a small stack on the side.
  7. Final Touches (1 minute): Drizzle a little honey over the brie or goat cheese. Sprinkle a pinch of flaky sea salt over the cheddar. Garnish with a few fresh rosemary sprigs or edible flowers if you have them.

Notes

Let cheeses sit out for at least 20 minutes before serving for best flavor. For a vegetarian version, skip the meats and add more cheese, marinated artichokes, or roasted red peppers. The board is best served at room temperature. Leftovers can be stored in separate airtight containers in the fridge for up to 2 days.
