A refreshing and easy-to-make frozen peach bellini slush combining frozen peaches, sparkling rosé, and a touch of lemon juice for a perfect summer drink.

  • 3 cups (450g) frozen peach slices, preferably large and ripe without added sugar
  • 1 bottle (750 ml) sparkling rosé, dry or semi-dry
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons simple syrup (optional, adjust to taste)
  • 1 cup (240 ml) ice cubes
  • Fresh peach slices for garnish (optional)

Instructions

  1. Remove about 3 cups (450g) of frozen peach slices from the freezer. Do not thaw.
  2. In a blender, add frozen peaches and 1 cup (240 ml) ice cubes. Pulse a few times to break down the ice, then blend on high until the mixture is a coarse slush with small peach chunks visible.
  3. Add 2 tablespoons fresh lemon juice and 2 tablespoons simple syrup (or less to taste). Blend briefly to combine.
  4. With the blender running on low, slowly pour in the entire bottle (750 ml) of sparkling rosé. Blend just long enough to mix without flattening the bubbles.
  5. Taste and check texture. If too thick, add a splash more rosé or a few ice cubes and pulse again. If not sweet enough, add more simple syrup and blend briefly.
  6. Serve immediately in chilled glasses, garnished with fresh peach slices if desired.

Notes

Add sparkling rosé last and blend minimally to preserve bubbles. Use frozen peaches straight from the freezer for best texture. Adjust sweetness with simple syrup gradually. Chill glasses beforehand for best serving experience. For non-alcoholic version, substitute sparkling rosé with sparkling peach soda or flavored seltzer and add peach nectar.
