A sweet-savory flatbread featuring honey roasted figs, creamy brie, and a tangy balsamic reduction, perfect for easy entertaining and quick preparation.

  • 1 large pre-made flatbread or naan (about 1012 inches)
  • 68 ripe fresh figs, quartered (or dried figs soaked in warm water as substitute)
  • 6 ounces brie cheese, rind removed and sliced
  • 2 tablespoons honey (raw or wildflower preferred)
  • 1 tablespoon extra virgin olive oil
  • ½ cup balsamic vinegar
  • 1 teaspoon fresh thyme leaves (optional)
  • Pinch of flaky sea salt
  • Freshly cracked ground black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Place pizza stone in oven if using to heat up.
  2. In a mixing bowl, toss quartered figs with 2 tablespoons honey and a pinch of black pepper. Let sit while oven heats.
  3. Pour ½ cup balsamic vinegar into a small saucepan. Bring to gentle boil over medium heat, then reduce to simmer. Cook 10-12 minutes until thick and syrupy, stirring occasionally. Set aside to cool.
  4. Lightly brush flatbread with 1 tablespoon olive oil on both sides.
  5. Spread honey-coated figs on a parchment-lined baking sheet. Roast in oven for 8-10 minutes until caramelized but still firm.
  6. Place oiled flatbread on preheated pizza stone or baking sheet. Arrange roasted figs evenly over surface. Scatter brie slices on top without overcrowding.
  7. Bake flatbread for 12-15 minutes until edges are golden and brie is melted and bubbly. Tent with foil mid-bake if brie browns too quickly.
  8. Remove from oven. Drizzle with balsamic reduction and sprinkle fresh thyme leaves and flaky sea salt on top.
  9. Slice into wedges and serve warm.

Notes

Roast figs separately to avoid soggy flatbread. Simmer balsamic reduction gently to prevent burning. Lightly brush flatbread with olive oil for crispness. Remove brie rind for smooth melting or leave on for texture. Tent flatbread with foil if brie browns too fast. Fresh thyme adds herbal brightness but is optional.
