  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh or frozen huckleberries
  • 2 tablespoons granulated sugar
  • 1 teaspoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 8×8 inch baking pan or line it with parchment paper.
  2. Make the crust: In a medium bowl, combine flour, sugar, and salt. Cut in the cold, cubed butter until mixture resembles coarse crumbs. Press firmly into the bottom of the prepared pan. Bake for 15 minutes until lightly golden.
  3. Prepare the cream cheese filling: Beat softened cream cheese and sugar until smooth. Add egg, lemon juice, lemon zest, and vanilla extract. Mix until fully combined and glossy.
  4. Prepare the huckleberry topping: Toss huckleberries with sugar and cornstarch.
