  • 2 cups (400g) granulated sugar
  • 2 tablespoons (15g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (240ml) buttermilk, room temperature
  • 1 cup (240ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring (gel-based recommended)
  • 16 oz (450g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup (150g) fresh blueberries
  • Optional: extra powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, vegetable oil, eggs, white vinegar, vanilla extract, and red food coloring until well blended.
  4. Slowly add the wet ingredients to the dry ingredients, mixing on low speed until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then transfer to cooling racks to cool completely.
  8. Beat cream cheese and butter until smooth and creamy. Gradually add powdered sugar, vanilla extract, and salt. Beat until fluffy.
  9. Using a serrated knife, cut each cake layer into 1 ½-inch-wide strips (about 3 strips per layer).
  10. On a large serving platter, arrange cake strips in alternating rows with thick layers of cream cheese frosting between to mimic stripes.
  11. Create the blue field in the top-left corner with a rectangle of frosting topped with fresh blueberries.
  12. Refrigerate the assembled cake for at least 1 hour to set the frosting and meld flavors.
  13. Bring to room temperature before serving.

Notes

Use gel food coloring for vibrant color without thinning the batter. Keep cream cheese and butter at room temperature for smooth frosting. Chill cake before slicing for cleaner cuts. Fresh blueberries are best for decoration to avoid sogginess. The cake can be made a day ahead and stored wrapped in the fridge.
