  • 16 ounces cream cheese (450 g), softened
  • ½ cup unsalted butter (115 g), softened
  • 4 cups powdered sugar (480 g), sifted
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Fresh strawberries, sliced (for decoration)
  • Blueberries (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans with butter and dust with flour or line with parchment paper.
  2. In a large bowl, sift together flour, cocoa powder, baking soda, salt, and granulated sugar. Whisk to combine.
  3. In a separate medium bowl, whisk together buttermilk, vegetable oil, eggs, red food coloring, vanilla extract, and white vinegar until smooth.
  4. Gradually pour wet ingredients into dry ingredients, stirring gently with a rubber spatula until just combined. Avoid overmixing.
  5. Divide batter evenly between prepared pans. Tap pans gently to release air bubbles. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Rotate pans halfway through baking.
  6. Cool cakes in pans on wire racks for 10 minutes. Run a knife around edges, invert cakes onto racks, and cool completely (about 1 hour).
  7. Prepare frosting by beating cream cheese and butter until smooth. Gradually add powdered sugar and beat until fluffy. Stir in vanilla extract and salt.
  8. Slice each cake horizontally into two even layers, creating four layers total.
  9. Spread cream cheese frosting evenly between layers and assemble layers to create a flag pattern. Decorate the top left corner with blueberries and use sliced strawberries for stripes.
  10. Frost the entire cake smoothly with an offset spatula. Chill cake for 30 minutes before serving to firm up frosting.

Use gel food coloring for vibrant color. Ensure all ingredients are at room temperature for best mixing. Sift flour and powdered sugar to avoid lumps.
