  • 1 cup fresh strawberries, hulled and halved
  • 1 cup ripe pineapple chunks, fresh or canned (drained if canned)
  • 2 medium kiwis, peeled and sliced
  • ½ cup blueberries
  • 2 tablespoons honey (preferably raw, local honey)
  • Juice of 1 large lime (about 2 tablespoons)
  • A handful of fresh mint leaves, chopped (optional)
  • A pinch of salt

Instructions

  1. Rinse all the fruit under cold water. Hull and halve the strawberries, peel and slice the kiwi, and drain pineapple chunks if using canned. Slice everything into bite-sized pieces.
  2. In a small bowl, whisk together 2 tablespoons of honey, the juice of 1 large lime (about 2 tablespoons), and a pinch of salt until the honey fully dissolves and the mixture is glossy and smooth.
  3. Pour the dressing over the fruit in a large mixing bowl. Gently toss everything together with a wooden spoon or your hands to coat all the fruit evenly without bruising.
  4. Chop a handful of fresh mint leaves and sprinkle over the salad. Give it one last gentle toss (optional).
  5. Serve immediately or refrigerate for up to 2 hours, covered tightly to prevent drying out.

Notes

Use ripe but firm fruit to avoid mushiness. Whisk the dressing thoroughly until smooth and glossy. Toss gently to keep fruit intact. Best served fresh but can be refrigerated up to 2 hours. If using frozen fruit, thaw and drain well to avoid sogginess. For vegan option, substitute honey with maple syrup.
