A simple, no-cook lunchbox idea featuring crisp apple slices and sharp cheddar cheese, layered in a bento box with crackers and optional nuts or dried fruit. Perfect for busy mornings, this recipe comes together in under 5 minutes and stays fresh for hours.

  • 1 medium apple (Honeycrisp, Fuji, or Gala)
  • 2 ounces sharp cheddar cheese (block cheese, sliced into thin squares or small cubes)
  • Handful of whole wheat crackers (optional)
  • ¼ cup almonds or walnuts (optional)
  • ¼ cup dried cranberries or raisins (optional)
  • 1 tablespoon sunflower seeds or pumpkin seeds (optional)
  • Cold water (enough to cover apple slices)
  • Pinch of salt (about 1/8 teaspoon)

Instructions

  1. Wash the apple thoroughly. Cut it in half, remove the core, and slice into thin rounds or half-moons about ¼-inch thick.
  2. Fill a small bowl with cold water and add a pinch of salt. Stir to dissolve, then add the apple slices. Let them soak for 2-3 minutes to prevent browning.
  3. Remove the apple slices from the water and pat them dry with a paper towel. Lay them out to air dry if needed.
  4. Cut the cheddar block into thin squares or small cubes, about the same size as the apple slices.
  5. Arrange the apple slices and cheese in one compartment of a bento box, layering them in a fan pattern. Add crackers to another compartment, and any extras (almonds, dried cranberries, seeds) to the third compartment.
  6. If packing for later, tuck a small ice pack into the lunchbox to keep the cheese fresh.
  7. Serve immediately or pack for later. Store in the refrigerator until ready to go.

Notes

For best results, use cold ingredients. The saltwater soak prevents apple browning without altering flavor. Pre-shredded cheese is not recommended due to anti-caking agents. This bento is best eaten within 12 hours for optimal texture.
