  • 1 teaspoon sesame oil
  • 2 green onions, thinly sliced

Instructions

  1. Prepare the rice: If using freshly cooked rice, spread it on a plate and let it cool to remove moisture. Day-old rice works best because it’s drier and less sticky. (5 minutes)
  2. Whisk the eggs: Crack 2 large eggs into a bowl and whisk lightly until yolks and whites are just combined — not overbeaten. This keeps the eggs tender. (2 minutes)
  3. Heat the skillet: Place your skillet over medium-high heat and add 1 tablespoon soy butter. Let it melt fully, swirling so it coats the surface. You want it hot but not smoking. (1 minute)
  4. Add peas and optional garlic: Toss in the frozen peas and minced garlic if using. Stir for about 1 minute until peas are warmed through and fragrant. (1 minute)
  5. Cook the eggs: Push the peas to one side of the pan. Pour eggs into the empty side and let them sit undisturbed for 10-15 seconds. Then gently fold the eggs with the spatula, allowing them to cook softly — you want creamy curds, not dry scramble. (1-2 minutes)
  6. Combine rice and eggs: Add the cooked rice to the skillet. Drizzle 1 tablespoon soy sauce and 1 teaspoon sesame oil over everything. Stir gently but thoroughly to coat the rice and mix eggs and peas evenly. (2 minutes)
  7. Finish with green onions and seasoning: Remove from heat and sprinkle sliced green onions on top. Add freshly ground black pepper to taste. Stir once more and serve immediately.

Use day-old rice for best texture. Whisk eggs lightly to keep them creamy. Control heat to avoid burning soy butter. Fold eggs gently to maintain soft curds. If soy butter is unavailable, substitute with unsalted butter or neutral oil. For gluten-free, use tamari instead of soy sauce. For vegan, replace eggs with scrambled tofu seasoned with turmeric.
