  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 1/2 cup chicken broth or white wine
  • 1/4 cup fresh parsley, chopped
  • Juice of half a lemon
  • Grated Parmesan cheese (optional garnish)
  • Extra chopped parsley (optional garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 oz spaghetti and cook according to package directions (usually 9-11 minutes) until al dente. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, pat 1 lb shrimp dry with paper towels. Season lightly with salt and pepper.
  3. In a large skillet over medium heat, melt 4 tablespoons butter. Add minced garlic and 1/4 teaspoon red pepper flakes (if using). Stir frequently for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Add shrimp to the skillet in a single layer. Cook about 2 minutes per side until pink and opaque. Cook in batches if needed to avoid overcrowding.
  5. Add 1/3 cup chopped sun-dried tomatoes. Pour in 1/2 cup chicken broth or white wine to deglaze the pan, scraping up browned bits. Let simmer for 2-3 minutes to reduce slightly.
  6. Add drained pasta to the skillet and toss gently to coat. If sauce is thick, stir in reserved pasta water a tablespoon at a time until silky consistency is reached.
  7. Stir in juice of half a lemon and 1/4 cup chopped fresh parsley. Taste and adjust seasoning with salt and pepper if needed.
  8. Serve immediately, garnished with grated Parmesan and extra parsley if desired.
