Quick Roasted Butternut Squash Soup: Easy 30-Minute Recipe

A fast and flavorful butternut squash soup made with high-heat roasting for caramelized depth in just 30 minutes. Perfect for busy weeknights and last-minute gatherings.

  • 1 medium butternut squash (about 2–3 pounds), cut into 1-inch cubes (no need to peel)
  • 10–12 fresh sage leaves
  • 1 medium yellow onion, roughly chopped
  • 3–4 garlic cloves, smashed
  • 2–3 tablespoons olive oil
  • 3–4 cups low-sodium vegetable broth
  • Salt and black pepper to taste
  • Optional: 1/4 cup heavy cream or coconut milk
  • Optional: 1 tablespoon maple syrup

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut the butternut squash in half lengthwise, scoop out seeds, and cut into rough 1-inch cubes. No need to peel.
  3. On the prepared baking sheet, toss the squash cubes, chopped onion, and smashed garlic cloves with 2-3 tablespoons of olive oil. Season with salt and pepper. Spread in a single layer.
  4. Tuck the fresh sage leaves among the vegetables.
  5. Roast for 20-25 minutes, stirring halfway through, until the squash is fork-tender and edges are browned and caramelized.
  6. Transfer all roasted vegetables and sage to a large pot or Dutch oven. Pour in 3 cups of vegetable broth.
  7. Using an immersion blender, blend until smooth. Alternatively, blend in batches in a regular blender, being careful with hot liquids.
  8. Adjust consistency with additional broth if needed. Taste and adjust seasoning. If using cream or coconut milk, stir in now and heat gently.
  9. Serve hot, garnished with crispy sage leaves, a drizzle of cream or olive oil, and black pepper.

Notes

For a creamier texture, add 1/4 cup heavy cream or coconut milk after blending. If your squash isn’t very sweet, add 1 tablespoon maple syrup. The soup can be made ahead and stored in the refrigerator for up to 5 days or frozen for up to 3 months. The flavors deepen overnight.
