These quick Russian tea cake cookies skip the chilling step without sacrificing that melt-in-your-mouth texture. Ready in just 20 minutes, they’re buttery, nutty, and coated in snowy powdered sugar.

Ingredients

Scale
  • 1 cup unsalted butter, softened to room temperature
  • ½ cup powdered sugar, plus extra for coating
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 cup finely chopped pecans or walnuts
  • 1 cup powdered sugar, sifted (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, beat 1 cup softened unsalted butter with ½ cup powdered sugar until light and fluffy, about 2-3 minutes on medium speed.
  3. Mix in 1 teaspoon vanilla extract until just combined.
  4. In a separate bowl, whisk together 2 cups all-purpose flour and ¼ teaspoon salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until the dough just comes together.
  6. Gently stir in 1 cup finely chopped pecans or walnuts using a spatula.
  7. Scoop out tablespoon-sized portions of dough and roll into 1-inch balls.
  8. Place the balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, until bottoms are lightly golden and tops are set but not browned.
  9. Let the cookies cool on the baking sheet for exactly 5 minutes.
  10. While still warm, gently roll each cookie in a bowl of sifted powdered sugar. Place on a cooling rack. After they’ve cooled completely (about 15 minutes), roll them in powdered sugar again.

Notes

Room temperature butter is crucial for the no-chill method. Don’t skip the double coating of powdered sugar for the classic snowy look. Watch baking time closely—cookies go from perfect to overbaked quickly. Toast nuts first for deeper flavor.
