  • 1 tablespoon kosher salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon black peppercorns

Instructions

  1. Rinse 1 pound (450g) of fresh green beans thoroughly. Trim the stem ends off, and cut longer beans in half if desired. This takes about 5-7 minutes.
  2. Place 2-3 smashed garlic cloves, 1-2 sprigs of fresh dill, ½ teaspoon red pepper flakes, and ½ teaspoon black peppercorns into each pint-sized jar. Using tongs or chopsticks, pack the green beans vertically, pressing gently to avoid breaking but ensuring a tight fit. Leave about ½ inch (1.3 cm) of space at the top. This takes about 5 minutes per jar.
  3. In a small saucepan, combine 1 ½ cups (360ml) white vinegar, 1 ½ cups (360ml) water, 1 tablespoon kosher salt, and 1 teaspoon granulated sugar. Bring to a boil over medium-high heat, stirring occasionally to dissolve salt and sugar. Once boiling, remove from heat immediately. This takes 7-10 minutes.
  4. Carefully pour the hot brine over the green beans in each jar, covering the beans completely. Tap jars gently on the counter to release trapped air bubbles. Wipe rims clean with a damp cloth, then seal with lids.
  5. Let jars cool to room temperature (about 30 minutes), then transfer to the refrigerator. Beans develop flavor after about 24 hours but taste best after 3 days. Keep refrigerated for up to 2 weeks.
