Refreshing Boozy Watermelon Lemonade with Mint

A quick and easy summer drink blending fresh watermelon, lemon juice, mint, and vodka or rum for a refreshing boozy lemonade perfect for parties or relaxing afternoons.

Ingredients

  • 4 cups (600g) cubed seedless watermelon, chilled
  • 1/2 cup (120ml) fresh lemon juice
  • 1/4 cup (50g) granulated sugar or simple syrup
  • 1012 fresh mint leaves, gently crushed
  • 1 cup (240ml) vodka or white rum
  • 1 cup (240ml) cold water or sparkling water
  • Ice cubes as needed
  • Optional: lemon slices and mint sprigs for garnish

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks and chill beforehand.
  2. Place watermelon chunks in a blender and puree until smooth, about 1 minute.
  3. Optional: Strain the watermelon puree through a fine mesh strainer into a pitcher to remove pulp and seeds.
  4. Stir in 1/2 cup (120ml) fresh lemon juice and 1/4 cup (50g) granulated sugar or simple syrup until sugar dissolves.
  5. Tear or gently crush 10-12 fresh mint leaves and add to the pitcher, stirring lightly.
  6. Add 1 cup (240ml) vodka or white rum and stir gently to blend.
  7. Pour in 1 cup (240ml) cold water or sparkling water and stir again.
  8. Add ice cubes to fill the pitcher or pour over ice-filled glasses.
  9. Garnish with lemon slices and mint sprigs before serving.

Notes

For a pulp-free lemonade, strain the watermelon puree. Adjust sugar based on watermelon sweetness. Use ripe watermelon for best flavor. Prepare base ahead and add sparkling water and ice just before serving to keep fizz fresh. Non-alcoholic version can be made by replacing alcohol with sparkling water or lemon-lime soda.
