  • 1 ribeye steak, 12-16 oz (340450 g), 1 to 1.5 inches thick, preferably USDA Choice or better
  • 4 tablespoons unsalted butter (57 g), softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 68 scallions, trimmed and rinsed
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Bring the ribeye steak to room temperature by letting it sit on the counter for about 30 minutes. Pat dry with paper towels.
  2. Season both sides of the steak generously with salt and freshly ground black pepper.
  3. In a small bowl, mix softened butter with minced garlic, chopped rosemary, and thyme. Set aside.
  4. Heat a cast iron skillet over medium-high heat and add olive oil. Wait until shimmering but not smoking, about 3-5 minutes.
  5. Place the steak gently in the pan and sear for about 4 minutes on the first side without moving it.
  6. Flip the steak and cook for another 3 minutes.
  7. Add the garlic herb butter and scallions to the pan. Tilt the pan slightly and continuously baste the melted butter over the steak and scallions for 2-3 minutes.
  8. Check for doneness using a meat thermometer: 130°F (54°C) for medium-rare, 140°F (60°C) for medium. Alternatively, press the steak gently to feel for springiness.
  9. Transfer the steak to a warm plate, cover loosely with foil, and let rest for 5-7 minutes.
  10. Slice the steak against the grain and serve with charred scallions on top or alongside. Optionally, drizzle lemon juice over scallions.

Notes

Keep an eye on scallions to avoid burning; move them to a cooler part of the pan if needed. Resting the steak is crucial for juicy meat. For dairy-free, substitute butter with vegan butter or ghee. Use a meat thermometer for best doneness accuracy.
