Ingredients

Scale
  • 1 pound ground beef (80/20 blend)
  • 1/2 cup roasted and chopped Hatch green chilies (about 75 g)
  • 4 ounces cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil or avocado oil
  • Burger buns (optional, brioche or potato buns recommended)
  • Optional toppings: lettuce, tomato slices, pickles, burger sauces

Instructions

  1. Prepare the filling: In a small bowl, mix the softened cream cheese with the chopped roasted Hatch green chilies until combined. Set aside.
  2. Season the beef: Place ground beef in a large mixing bowl. Add garlic powder, onion powder, smoked paprika, salt, and pepper. Gently mix until just combined, avoiding over-mixing.
  3. Divide and shape: Split the beef mixture into 8 equal portions. Flatten each into a thin patty about 4 inches wide.
  4. Add the filling: Place a heaping tablespoon of the cream cheese and chili mixture in the center of four patties, spreading slightly but contained.
  5. Seal the patties: Top the filled patties with the remaining four patties, pressing edges firmly to seal the filling inside.
  6. Preheat skillet or grill pan over medium-high heat and add oil. The pan should be hot enough that a drop of water sizzles immediately.
  7. Cook the patties: Place stuffed patties in the hot pan. Cook 4-5 minutes per side until browned and crispy, flipping carefully once.
  8. Check doneness: Patties should reach an internal temperature of 160°F (71°C). If no thermometer, ensure juices run clear and patties feel firm.
  9. Rest the patties: Transfer to a plate and let rest for 3-5 minutes to redistribute juices and keep filling melty.
  10. Serve: Place patties on buns or plates, add desired toppings, and enjoy.

Notes

Chill patties for 15 minutes before cooking to help them hold shape and prevent filling leakage. Avoid over-mixing beef to keep patties tender. Seal edges firmly to prevent cream cheese from leaking. Use a hot pan for a good sear and flip patties only once. Rest patties after cooking for juicy results. For gluten-free, skip buns or use gluten-free buns. Can substitute ground turkey for a lighter version or plant-based mix for vegetarian adaptation.
