  • 2 tablespoons (28g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 2 tablespoons (25g) light brown sugar, packed
  • 1 large egg yolk
  • ½ teaspoon vanilla extract
  • ¼ cup plus 1 tablespoon (about 40g) all-purpose flour
  • ⅛ teaspoon baking soda
  • ⅛ teaspoon salt
  • 3 tablespoons (about 35g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Melt 2 tablespoons of unsalted butter in a microwave-safe bowl in 15-second intervals until just melted. Let cool for a minute or two.
  3. In a mixing bowl, combine the melted butter with 2 tablespoons of granulated sugar and 2 tablespoons of packed light brown sugar. Whisk vigorously for about 30 seconds until it forms a thick paste.
  4. Add 1 large egg yolk and ½ teaspoon of vanilla extract. Whisk until smooth and glossy.
  5. In a small bowl, whisk together ¼ cup plus 1 tablespoon of all-purpose flour, ⅛ teaspoon of baking soda, and ⅛ teaspoon of salt.
  6. Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold together gently until just combined. Do not overmix.
  7. Fold in 3 tablespoons of semi-sweet chocolate chips until evenly distributed. The dough will be thick and slightly sticky.
  8. Divide the dough into two equal portions and roll each into a smooth ball. Place them on the prepared baking sheet, spacing them about 3 inches apart.
  9. Bake for 10-12 minutes. The edges should be golden brown and set, but the centers will still look soft and slightly puffy.
  10. Let the cookies cool on the baking sheet for 5 minutes. Then transfer to a cooling rack or enjoy warm.

Notes

For a chewier texture, use more brown sugar than white sugar. If the dough is too sticky, chill it in the fridge for 10 minutes. Press extra chocolate chips on top of warm cookies for a bakery look. Let cookies cool on the baking sheet for 5 minutes before moving.
