  • 45 medium jalapeños, seeded and finely chopped (fresh or thawed frozen)
  • 1/2 cup (50 g) cooked and crumbled bacon bits
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1/2 cup (120 ml) sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika (optional but recommended)
  • Salt and black pepper to taste

Instructions

  1. Preheat smoker to 225°F (107°C). Place softened cream cheese on foil or in a small pan and smoke for about 30 minutes until it picks up a subtle smoky aroma but does not melt completely.
  2. While cream cheese is smoking, finely chop jalapeños, removing seeds if less heat is desired. If using frozen jalapeños, thaw and pat dry thoroughly.
  3. Cook 4-5 strips of bacon until crisp if not using pre-cooked bacon bits. Drain on paper towels and crumble once cool.
  4. In a mixing bowl, combine smoked cream cheese, sour cream, shredded cheddar, chopped jalapeños, bacon bits, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix thoroughly until well combined and thick but scoopable.
  5. Spoon mixture into an oven-safe baking dish or cast iron skillet, smoothing the top with a spatula.
  6. Preheat oven to 375°F (190°C). Bake dip uncovered for 20-25 minutes until bubbly and slightly golden on top.
  7. Let dip cool for 5 minutes, then garnish with extra bacon bits or chopped green onions if desired. Serve warm with tortilla chips, crackers, or fresh veggies.

Notes

Do not over-smoke the cream cheese; 30 minutes at low heat is sufficient. Use fresh jalapeños for brighter heat and better texture. Ensure bacon bits are crispy for best flavor and crunch. Drain jalapeños well to avoid watery dip. Use full-fat sour cream for creaminess. If no smoker is available, smoked paprika or stovetop smoking can mimic smoky flavor.
