This creamy, spicy buffalo chicken dip features a fun spiderweb design made with sour cream, perfect for Halloween parties. It’s quick to make with rotisserie chicken and simple ingredients, and it’s always a crowd-pleaser.

  • 16 ounces cream cheese, softened
  • 3 cups cooked chicken, shredded (about one rotisserie chicken)
  • ½ cup buffalo hot sauce (preferably Frank’s RedHot)
  • 1 packet dry ranch dressing mix
  • 1½ cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • ½ cup sour cream
  • ¼ cup sliced green onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Let the cream cheese sit on the counter while the oven heats up.
  2. Shred the chicken: If using a rotisserie chicken, remove the skin and pull the meat apart with two forks into small, bite-sized shreds. You should have about 3 cups.
  3. Combine the dip base: In a large mixing bowl, add the softened cream cheese, shredded chicken, buffalo hot sauce, dry ranch dressing mix, 1 cup of shredded cheddar cheese, and the full cup of shredded mozzarella. Mix with a spatula until fully combined.
  4. Transfer to the baking dish: Spread the mixture evenly into a 9-inch pie dish or oven-safe skillet. Smooth the top with a spatula.
  5. Top with remaining cheddar: Sprinkle the remaining ½ cup of shredded cheddar cheese over the top.
  6. Bake for 15 minutes, until the cheese is melted and the edges are bubbling. (Alternatively, microwave on high for 5 minutes, stir, add top cheese, and cook another 2 minutes.)
  7. Prepare the sour cream web: While the dip bakes, fill a squeeze bottle or zip-top bag with the ½ cup of sour cream. If using a bag, snip off a tiny corner.
  8. Create the spiderweb design: Once the dip comes out of the oven, let it cool for about 2 minutes. Squeeze a small dollop of sour cream in the center, then squeeze concentric circles around it, working outward (about 4-5 circles total).
  9. Draw the web lines: Using a toothpick or the tip of a knife, start at the center and drag it outward through the sour cream circles to the edge of the dish. Repeat every inch or so around the entire dip.
  10. Garnish and serve: Sprinkle sliced green onions over the top. Serve immediately with tortilla chips, celery sticks, or crackers.

Notes

For best results, use full-fat sour cream and let the dip cool for 3 minutes before adding the web to prevent it from melting. The dip can be assembled a day ahead (without the sour cream web) and baked just before serving. Leftovers keep in the refrigerator for up to 4 days.
