  • 1 teaspoon pure vanilla extract
  • 1 cup (150g) fresh blueberries
  • 4 ounces (115g) cream cheese, softened
  • ½ cup (60g) powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Using an electric mixer, beat the softened butter and granulated sugar until fluffy and pale, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the lemon zest and vanilla extract.
  5. Gradually add the dry ingredients to the wet, mixing on low speed or folding gently with a spatula until just combined.
  6. Carefully fold in the fresh blueberries, being gentle to avoid crushing them.
  7. In a small bowl, beat the cream cheese with powdered sugar and lemon juice until smooth and creamy. Transfer to a piping bag or zip-top bag.
  8. Scoop about 1 ½ tablespoons (20g) of dough and flatten slightly in your palm. Pipe about a teaspoon of cream cheese filling in the center, then top with another flattened scoop of dough, sealing the edges gently. Roll into a ball.
  9. Roll each filled dough ball in granulated sugar to coat, then place 2 inches apart on the baking sheets.
  10. Bake for 12-14 minutes or until cookies are lightly golden and crinkled on top but still soft to the touch.
  11. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
