  • 2 racks of baby back pork ribs (about 23 pounds / 9001350 grams)
  • 2 tablespoons olive oil
  • 2 tablespoons paprika (smoked paprika optional)
  • 1 tablespoon brown sugar (light or dark)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt
  • Optional: ½ teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Remove the silver skin membrane from the back of the ribs using a paper towel for grip.
  3. Lightly brush both sides of the ribs with olive oil.
  4. In a mixing bowl, combine paprika, brown sugar, garlic powder, onion powder, cumin, chili powder, black pepper, salt, and cayenne pepper if using. Stir well.
  5. Generously coat both sides of the ribs with the dry rub, pressing it into the meat.
  6. Place the ribs meat-side up on a wire rack set over a baking sheet. If no rack is available, place ribs directly on a foil-lined pan.
  7. Loosely cover the ribs with aluminum foil to trap steam and keep the meat moist.
  8. Bake in the oven for 2.5 to 3 hours. Check at 2.5 hours for tenderness and the edges pulling back from the bone.
  9. Optional: For the last 5 minutes, remove the foil and broil to crisp the rub crust, watching carefully to avoid burning.
  10. Remove ribs from oven and let rest for 10 minutes before slicing and serving.

Notes

Remove the silver skin membrane for better tenderness and flavor penetration. Use a wire rack to prevent sogginess and promote even cooking. Tent ribs with foil to keep moisture. For smoky flavor without a smoker, add a few drops of liquid smoke to the rub or use smoked paprika. Rest ribs after baking to lock in juices. Avoid rushing the cooking time to prevent dry, chewy ribs.
