  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Heat a large skillet over medium-high heat. Add the breakfast sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 6 to 8 minutes. Leave about a tablespoon of fat in the pan.
  2. Add the diced onion and bell pepper to the skillet and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.
