Instructions

  1. Preheat your oven to 350°F (175°C). Place your ramekins or baking dish on a small baking sheet to catch any bubbly juices.
  2. Peel, core, and chop your apples into 1/2-inch cubes. Place them in a medium mixing bowl.
  3. To the apples, add 1 tablespoon maple syrup, 1 teaspoon lemon juice, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1 teaspoon cornstarch, and a pinch of salt. Stir until evenly coated. Let sit while you make the topping.
  4. In a small bowl, combine 1/4 cup rolled oats, 2 tablespoons almond flour, 1/2 teaspoon cinnamon, and a pinch of salt. Add the cold butter pieces and 1 tablespoon maple syrup. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining.
  5. Divide the apple mixture evenly between two 8-ounce ramekins. Sprinkle the topping evenly over each, pressing down gently with your fingers.
  6. Place the baking sheet with the ramekins in the preheated oven. Bake for 25-30 minutes, or until the filling is bubbly and the topping is golden brown. If the topping browns too quickly, tent loosely with foil for the last 5-10 minutes.
  7. Let the crisps cool for at least 5-10 minutes before serving to allow the filling to thicken.
