  • 3 tablespoons (45ml) low-sodium soy sauce
  • 2 tablespoons (30ml) oyster sauce
  • 1 tablespoon (15ml) unseasoned rice vinegar
  • 1 tablespoon (12g) packed light brown sugar
  • 1 teaspoon (5ml) toasted sesame oil
  • 2 teaspoons (5g) cornstarch for the sauce, plus 1 tablespoon (8g) for coating the chicken
  • 4 cloves garlic, minced
  • 1-inch piece (15g) fresh ginger, peeled and minced
  • 2 tablespoons (30ml) vegetable oil (avocado or canola oil)
  • 1 medium bell pepper (any color), sliced
  • 1 large carrot, julienned
  • 1 cup (100g) snap peas, trimmed
  • 34 green onions, sliced for garnish
  • Optional: sesame seeds and extra sesame oil for garnish
  • Salt and black pepper to taste

Instructions

  1. Prep the Chicken: Pat the chicken thighs completely dry with paper towels. Cut into 1-inch pieces. In a medium bowl, toss the chicken with 1 tablespoon (8g) cornstarch, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated. Set aside.
  2. Make the Sauce: In a small bowl, whisk together the low-sodium soy sauce, oyster sauce, rice vinegar, brown sugar, 2 teaspoons (5g) cornstarch, and 1/4 cup (60ml) water until the sugar and cornstarch are fully dissolved. Set near the stove.
  3. Heat Your Pan: Place a large skillet or wok over high heat. Add 2 tablespoons (30ml) of vegetable oil. Wait until the oil is shimmering and just about to smoke (about 2 minutes).
  4. Sear the Chicken: Carefully add the chicken pieces to the hot pan in a single layer (work in batches if needed). Cook undisturbed for 3-4 minutes until the bottoms are deep golden brown and crispy. Flip each piece and cook for another 3-4 minutes until cooked through (internal temperature reaches 165°F/74°C). Transfer to a plate and set aside.
  5. Cook the Aromatics: Reduce heat to medium-high. Add the minced garlic and ginger to the pan. Stir constantly for about 30 seconds until fragrant.
  6. Stir-Fry the Vegetables: Add the sliced bell pepper, julienned carrot, and snap peas. Stir-fry for 2-3 minutes until tender-crisp.
  7. Combine and Sauce: Return the seared chicken to the pan. Whisk the sauce again, then pour it over the chicken and vegetables. Stir and let it bubble for 1-2 minutes until the sauce thickens and coats everything.
  8. Finish and Serve: Remove from heat. Drizzle with toasted sesame oil and toss to combine. Garnish with sliced green onions and sesame seeds. Serve immediately over steamed rice or noodles.

Notes

Pat the chicken completely dry for maximum crispiness. Work in batches to avoid crowding the pan. Prep all ingredients before starting to cook. For a gluten-free version, use tamari instead of soy sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a hot skillet with a splash of water or broth.
